We hate to be the bearer of bad news, but there aren't many nice things in those little babies. Not to stress, we've recreated a Food Matters approved version that is just as tasty!

**PEPPERMINT FILLING**

### Ingredients

(use organic where possible)

- 1/3 cup shredded coconut
- 1/3 cup cashews, soaked for 4-6 hours or overnight
- 2 tbsp melted coconut oil
- 3 tbsp 100% pure maple syrup
- 1-2 drops of food grade peppermint oil
- Pinch of sea salt

**CHOCOLATE MIXTURE**

### Ingredients

(use organic ingredients where possible)

- 2 tbsp melted coconut oil
- 1/3 cup raw cacao powder
- 4 tbsp 100% pure maple syrup
- Pinch of sea salt
- 1 tsp ground cinnamon

### Directions

1. Add shredded coconut, soaked cashews, coconut oil, maple syrup and 1-2 drops of peppermint oil to the food processor and process until smooth.
2. Take 1-2 tbsp of the mixture and flatten into patties using your hands, placing them onto a lined tray.
3. Place into the freezer to set for around 30 minutes.
4. While the patties set in the freezer, you can mix together your chocolate mixture.
5. Whisk the cacao, coconut oil, salt, cinnamon and maple syrup together in a small bowl until well combined.
6. Check if the patties are set.
7. Dip each pattie (using a fork) into the chocolate mixture and coat evenly on both sides.
8. Place back onto the tray and into the freezer to set until firm.

**Note\***

- Soaking nuts, seeds and grains allows enzyme inhibitors to be released, making them easier to digest and enhances nutrient bio-availability. Soaking them also makes them easier to blend and results in a creamy consistency that is like milk. Most nuts generally require 7 - 12 hours or overnight of soaking time for optimal results. Discard the soaking water and thoroughly rinse with fresh water.
